Nothing says summer like cold treats. As the mercury has been on the rise, FruitShare has whipped up some organic fruit Popsicles to cool you down. Using organic cherries, blueberries and peaches we made three variations on a theme but substituted different bases. From full on dairy of our peaches & cream, to Greek yogurt and coconut cream we found one universal trait: Fresh organic fruit added to any of these is a winner. So go ahead with the good stuff, avoid artificial coloring, excess sugar and corn syrup and dig in. We really don’t think you can go wrong--and with a little experimentation we know you will discover your own great variations. In fact, watch for a contest on our Instagram feed. Missing a Popsicle mold? No worries clean milk cartons or paper cups will do just fine.
Lemon Blueberry Custard Pops
1 cup lemon custard style or Greek yogurt
1 cup whole organic milk
1 cup fresh or frozen organic blueberries**
4 cups and sticks
Whisk together yogurt and milk. Use the blender or food processor to blend berries (very important for kids who do not like fruit “chunks”). Add a small amount of the yogurt mixture and blend until smooth. You want only enough of the yogurt to mix the blueberries but you want this to remain thick. Next gently swirl the blueberry mixture into the yogurt mixture for a marbled pop or layer blueberry mix with yogurt mix in each cup to get a parfait effect. Freeze* and enjoy.
Cherry Almond Coconut Pops
1 can coconut milk (full fat)
A handful of pitted diced organic cherries**
1 cap almond extract
1-2 T powdered sugar to taste
½ cup toasted shredded coconut or dry roasted slivered almonds optional
Open can of coconut milk and pour into mixing bowl. Mix together coconut milk and cream and then set mixer on high speed and begin to make whipped cream. Whip on high speed for 3-5 minutes adding sugar and almond extract until coconut is thicker (this will not be as fluffy as whipped cream but it will be lighter and frothier the more you mix it). Next add diced cherries, nuts, and coconut and pour into molds and freeze*.
Peaches and Cream Pops
1 cup organic cream or half and half
1 T organic cane sugar
1 tsp vanilla (optional)
1 cup organic whole milk
2 ripe organic peaches sliced **
Pour whole cream into a bowl and mix with a blender for whipped cream. As the cream thickens slowly add the sugar and vanilla if desired (we love the flavor of the cream itself!). Wash peaches and slice into small pieces**. Add milk to whipped cream and fold in peaches and juice add to cups and freeze. *
* Wait until the pops are partially frozen before adding the sticks (if the stick falls you need to check a little later!)
**In all of these recipes you may wish to use blender or food processor to make fruit smooth if you do not want fruit pieces in the mix.
